GARLIC AND HERB ROASTED POTATOES
INGREDIENTS* 6 baby size potatoes, washed and quartered
PREPARATIONStep 1: Preheat oven to 200oC\400oF\Gas 5. In a medium heat, melt butter in a big frying pan, add 1 Tbsp of olive oil and chopped garlic. stir with a wooden spoon.
Step 2: Add the potatoes and stir. Add the spice and salt. Toss the frying pan continuously to ensure all potatoes is coated with the oil. Fry potatoes for approx. 3-5 mins.
Step 3: Remove pan from heat. Spread potatoes in a foil-lined baking sheet. Sprinkle the fresh rosemary or thyme on it and place your marinated chicken in the baking sheet.
Step 4: Transfer to the oven. Bake for 30-35 mins or until potatoes and chicken are golden brown, tender and crispy.
Serve and enjoy with chilled orange juice.
